This blog is really about our kids, Jacqui and Kyle:

Jacqui is a wonderfully energetic and opinionated six-year-old. She was born with a rare birth defect known as a lymphatic malformation (LM) and has been through a lot in her young life. She had a trach until she was a year old, had surgery in New York to remove her LM with world renowned surgeon, Dr. Milton Waner (at age three), and still has a G-tube. Jacqui is a bright sunny soul in spite of everything.

Kyle is a thoughtful, and slightly reserved two-year-old with a magical giggle and a wise-looking smile. He is clever and charming and a bundle of pure joy.

Our goal as parents: To treasure every moment and to raise our children to be extraordinary individuals.

Gluten-Free Gems … GFCF Pop-Up Pancakes

We have another breakfast winner! First things first … this idea originally comes from Make and Takes who posted a fantastic looking version that (unfortunately for my family) does contain gluten and casein. If you’re not on a GFCF diet, head on over there for the original recipe. I also need to give a little hat tip here to Up-North Mommy who posted about these fun little pancakes. Thanks for the great link, Up North Mommy — we’ve been having fun transforming them into a GFCF version!

These are really good (I even caught Ken polishing some off) and go fabulously with fresh fruit. If you want to be fancy, dust them with a little powdered sugar — the possibilities are really endless here!

GFCF Pop-Up Pancakes

1 Cup Rice Milk

1 Cup of Your Favorite GFCF Baking Flour Blend (The blend I use is below or check out Karen’s blend at Only Sometimes Clever)

1/4 cup melted GFCF margarine substitute (I used butter flavored Crisco)

Pinch of Salt

6 Eggs

2 TSP Baking Powder

Preheat oven to 400 degrees. Grease two standard sized muffin pans with your GFCF margarine substitute. Blend all the ingredients together in your blender and then spoon into muffin cups, filling them with batter to about 1/4 inch from the top of each cup.

Bake for 15 minutes, or until they are puffy and golden on top. Remove from pan and either serve immediately with your choice of toppings or cool and store in freezer for quick breakfasts on the go.

The original recipe says it makes 24, but I found that it makes about 21 if you fill the muffin cups as I did. More than enough for seconds!

Optional GFCF All Purpose Millet/Almond Flour Mix

1/2 Cup Tapioca Flour

1/2 Cup Sweet Rice Flour

1/2 Cup Millet Flour

1/2 Cup Almond Meal

1 Cup Brown Or White Rice Flour

Whisk flours together thoroughly with wire whisk. Store in refrigerator or freezer. Makes 3 Cups.

    Sounds good :) I like the flour mix. I was reading a book on grains tonight. Got a few good ideas for mixes that are homemade.

    It is so great that you share these GFCF ideas with other families! I know that eliminating gluten can make a huge difference for some children. I’m so glad that you figured out it was a trigger for Jacqui! Be blessed as you continue to homeschool and please continue to share progress with us!

    Do you find that mixing your own flour works/tastes that much better than some of the premixed all purpose flours…like Bob’s Red Mill? Initially I did handmix some stuff but then switched over. I’ll try it again if you find the end product superior. :)
